No soup in this one. Gizzards sliced thin and flashed in the wok with our own pickled long beans, then tossed through the noodles until the sauce clings to every strand. Crunchy, sour, hot — the dry-mix bowl Changsha locals order by name.

Cooked the Home Way

Nothing sits around here. Rice noodles come in fresh and get cooked in small batches all day, never left soaking. Beef bone and chicken go into the stockpot the night before and are skimmed rather than boosted, so the soup stays clear and tastes of what is actually in it. Chilies are dry-roasted and pounded in house; the long beans are put up in our own jars. Ducks go on the hooks each morning and come off as they sell.

Duck taken straight off the roast hook, chopped and laid over noodles in a clear broth so the skin holds its crackle a while longer. Prefer it dry-mixed? Say so at the counter and taste the glaze on its own.
